RAW COURGETTE

A dish we enjoyed at our Feast of Fish evening taken out of a River Cottage Light & Easy Cook book.

Ingredients:
4 courgettes grated into long strips
Big Pinch of Chilli or Peri Peri Flakes
Salt
Pepper
Olive Oil
Lemon Zest and its juice
Chopped Parsley
Chopped Basil

Method: Mix everything into a bowl and serve on the side of seafood.
