Fermented feast

Last night in Old Kea, Truro we experienced a truly marvellous collaboration with Cultura Live Food...a Fermented Feast that tantalised the taste buds and left us all craving more.

The evening kicked off with a fiery spoonful of Cultura Live Kimchi, which woke up our palates for what was to come.

The starter? A playful dish

We snapped crisp sourdough crackers as we scooped up silky whipped Black Rokke Padstow Cheese Company, tangy pickled cucumber, and fermented green tomatoes. An experience that had us wanting to savour every moment, perfectly paired with Original Jacks Kombucha.

Then came the showstopper - Confit of Trevilley farm Duck, meltingly tender with a rich, deep sauce that clung to every forkful. The sauerbeet-braised lentils and fermented carrots added a new dimension of flavour, and when sipped alongside Jack’s Rooibos Masala Chai Kombucha, it was a pairing match, made in heaven.

To finish? A very sweet ending

A Fermented Rhubarb & Almond Tart, which sat on top of the most incredible ginger caramel. The tart itself was topped with burnt sugar with a similar effect to cracking the top of a creme brulee, which was then topped with a sublime fizzy rhubarb sorbet. Each spoonful was a perfect balance of tart, sweet, and spiced warmth, elevated by Jack’s Rhubarb Kombucha.
