Malabar curry sauce recipe

You asked for it and your wish is granted. Following on from the enjoyed curry at our (44th) Chat and Eat Night, Chef Sam Tomlinson has kindly given us the recipe you were all asking for. So here is is - Easy-peasy and delicious.

Ingredients

2x diced onion

4x minced cloves of garlic 

2 tbsp garam masala 

2 tbsp medium Curry powder 

1 tbsp coriander powder 

1 tbsp cumin powder 

1 x star anise

1/2 tbsp tumeric 

6 x diced tomatoes

1 jug of veg or chicken stock

3 tbsp chopped fresh dill (optional) 

1x can of coconut milk 

1x bay leaf

1 tbsp cumin seeds

2-3 tbsp of sugar (to sweeten) 


Method

In hot oil cook bay leaf and cumin seeds and star anise 

Add in onion and lightly brown 

Add all dry spices and cook with oil- about 2 mins

Add garlic - bring down heat and cook out 2 mins

Add fresh tomatoes and cook down 5 mins 

Add jug of stock and coconut milk

Simmer for 30 mins 

Add dill or Coriander if preferred. 

Placed into a mixer or hand blend - remove star anise and bay leaf.

To serve cook veg/ meat or fish and add to sauce.
